        <content>I'm roasting a Belle Rouge chicken tonight and would really appreciate any tips. Paul, at the farmer's market said that if done correctly, the meat of a Belle Rouge chicken can be as tender and delicious as lobster.  Would love to hear your suggestions and tips for doing it right! Thanks in advance.</content>

      <content>Hey bbecker, 
I picked up a belle rouge this am too!  I recently tried the Marcella Hazan upside down roasting method and the bird was so juicy and tender but unfortunately lacking in lots of flavor. So while I would rec starting breast side down, I'm going to add other stuff tonight.
 
Oh, and since this question is more of a "general topic," why not post there?

      <content>Does the Belle Rouge chicken compare to that famoous poulet from France? And on that note, are Bresse chickens available for the common man in NYC, or does on have to traipse to an upscale French eatery for these... (actually, I've never even seen the Bresse chicken on the menu here, just Bresse pigeon, which I have no idea if that has AOC status...)

      <content>We raise and sell the Belle Rouge as well as a more industry standard Cornish x Plymouth rock. We raise both types exactly the same on our own highly customized feed, and infact it was our regular birds that at first attracted culinary attention. The Belle Rouge does however have a slightly better flavour and if cooked just right an incredible texture. We are interested in trying some of the Bress on our feed but so far we haven't been able to source chicks. </content>
