It seems as though the raspberry millefeuilles at Payard have turned into raspberry napoleons (the difference being number of layers of pastry and cream). Does anyone know when this occurred and whether these wonderful pastries will ever revert to their previous state?

MAB,

I know what you mean! I was in Payard for the first time in months this past weekend, and one of my favorite pastries in the past was the raspberry mille feuille. I loved the many different layers, each of which was extremely thin and had the right proportion of fruit and cream and pastry. But these new "napoleons" are just not as good. I wonder what spurred the change?
