Why in Bridgeport,CT area is cheese pizza scamotes or scamozza?

I grew up in CT all my life and my father grew up in Fairfield and whenever he ordered a cheese pizza he would ask for scamotes or scamozza? It seem indiginous only to the Fairfield County,CT area. Does anyone know why? Thanks,Richie

    I remember the same pizza. I grew up in Bridgeport and would run into the pizza place to pick up a " large scamotz", the best pizza I ever had. The place we bought the pie from was called Famous Pizza on park ave.

      Scamorza is a partially dried mozzarella type cheese. I am speculating that this is what, at one point they put on the pies and "scamotz" would be a more accurate (and italian) way of referring to a cheese pizza. The mozzarella used on pizza now is actually more like scamorza than the fresh milky mozz product.
