Ping's Seafood (Mott)

My friends and I have tried Ping's seafood three times in the past 2 weeks and have enjoyed every trip there. We were there for lunch on 2 occasions (3 dim sum carts were circulating) and found that the dim sum was quite good. The ingredients were much fresher than the other dim sum places in Chinatown, but Ping's has issues with the shrimp dumplings (har gow). The wrapper on the dumpling was oversteamed on both occasions and fell apart when we picked them up. It's a little disappointing because the fresh shrimp with bamboo inside is absolutely delicious. The taro balls were good even though they weren't hot.
On the menu, we also found several dishes to be amazing:
Crispy skin chicken: simple but well done
Fried Silver Fish: it's on the picture portion of the menu. This dish was excellent. The deep-fried fish were crispy on the outside and the soft inside didn't have a trace of bone in them. My friend thought that it would be great bar food.
Prawns with Cream sauce and fried milk: a spectacular dish that can quickly become cloying. It's meant for 4...at least. You'll eat yourself sick with just 2 people--trust me.
Good, but not amazing dishes included the steamed loofa with dried scallops (the loofa itself was excellent, but I've had much better versions of the dish), the famous XO oysters, baked squab, and the salt and pepper prawns. The skin on prawns were thicker than normal sized shrimp so they added too much "chew" to the dish.
I'm still itching to try some of the steamed live fish dishes. The flounder and the cod looked amazing...
