Pampa

I ate at Pampa last nigght, and it was very good. This
is the new argentine restaurant at 768 amsterdam (97th
-98th) that has been written up briefly in a number of
places. We had the mixed grill: short ribs (really a
flanken cut) and skirt steak which were very rare,
juicy, and beefy; a blood sausage, a regular sausage,
and organs: kidneys which were grilled to death and
and tough as shoe leather, but very tasty in their way;
intestines, (which they called tripe) and nicely
charred sweetbreads. The garlic/herb chimmichuri sauce
complemented the innards especially well. They put the
meats on a metal try with candles under it, and I was
scared that it would overcook them, but the candles
weren't warm enough. It did coagulate the fat and blood
dripping from the meat, though, which was great with
bread, or for dipping the french fries with had been
sprinkled (more like ladled) with chopped garlic and
parsely.) I could hear my blood cholesterol rising.

We also had grilled provolone, which smelled better
than it tasted , and a great spinach salad with sauteed
mushrooms and goat cheese. With tea and crepes with
dulce de leche, and a bottle of Chilean Merlot, it came
to abut $70 for two with tax and tip -- not bad at all,
and a very pleasant place.
