        <content> We have also had 3 completely disappointing meals at the firehouse. I agree that jack should be commended for his community work, whatever it is. But based solely on the merits of the food, the restaurant really sucks. One lady hypocritically says jack is not trendy yet he cooks black bear with a coca cola and lime sauce, it was disgusting !!!</content>

      <content>Bear with coca cola and lime sauce.  First time I had it was a few years ago at the James Beard House in New York. Jack was the guest chef that evening. The dish was rather well received.  Approximately 100 thumbs up as I recall.
 
The history of Jack's coca cola sauce is sort of interesting.  Can't remember whether Jack was working at Le Bec-Fin or its equivalent in DC at the time.  The sous-chef was razzing Jack, "All you Americans know is ketchup and Coca Cola."  Jack took up his challenge and made a sauce from Coca Cola.  The chef sampled it and it was on the menu that evening.

      <content>Jack was working at the late, great Lion D'Or in Washington DC, when he made his fateful coca-cola sauce.  Even Phyllis Richman, Food Critic for the Wash Post at the time, thought it was smashing.
 
But what does she know?  She only had two thumbs.</content>

      <content>Any one who tries to validate the use of high fructose corn syrup as an ingredient in serious cooking simply cannot be taken seriously. I think it is hilarious that there are all these post with coke as an ingredient, maybe you guys are doing too much "coke"</content>

      <content>Haven't had the Jack's Firehouse coke sauce, though this thread does remind me a spectacular dish that Hudson's On The Bend in Austin TX does-- coke marinated racks of ribs, which are then BBQ'ed and served with an orange/ginger BBQ sauce...  yum.</content>

      <content>Mmm. I think i've heard of that recipe. And i'm suddenly wishing for good barbecue and ribs.  
 
Speaking of...do we have any decent (not upscale) places for barbecue and ribs in Philly? 
 
[My chances of my typical summertime visits to regions farther south are looking slim this year. It's just too sad to contemplate a summer w/out barbeque.]

      <content>Your post got reminded me of a recent episode of "Nigella Bites" on the Style channel. She did a show of "trashy" recipes, including a coca cola ham (link attached).  I'm not sure if it's the best recipe, but Nigella has so much fun cooking, she sure made it look good.
 
Of course, I just switched from Comcast to Direct TV and lamenting the loss of the style channel.  I have to get my friends to tape Nigella Bytes so I can watch this very fun cooking show.
