        <content>I won't bore you with the long reason of why I refuse to eat cow meat unless I know that it is organic, suffice to say I am a researcher by nature. After the BSE episode in 2003, I did a 70+ page research paper on the safety of our beef supply. There are few countries in the world that have more lax standards than we do. Therefore, I only eat meat that is certified organic. I especially love bison meat. As you can imagine, it is expensive to get this way.
 
Hopefully one of my fellow chowheads knows where the Baltimore/greater Baltimore area they take good care to only serve organic meat, or even better, organic bison. Any suggestions?</content>

      <content>Cibola, but it's in VA, out near Culpepper.  posted the other day about their great sausages, of which we had some tonight for dinner.  Not a resto.  Just a farm.</content>

      <content>If you ever get down the DC way, Restaurant Nora and Asia Nora serve organic meats.  I'm not sure if they include bison, but you could call them.  They have menus on their site, but I think there are other options too.  I haven't been to Nora's for years (pre-organic certification), but at the time it was very good.  www.noras.com

      <content>Not sure if it is organic...but Ted's Montana Grill has great buffalo burgers. Their website says it serves naturally-raised bison. They have a location in Arlington at the Ballston Mall and I have heard there is a location at Crystal City.

      <content>You probably already know about this place, but in case others don't ... Gunpowder Bison &amp; Trading Co., a ranch in Monkton, sells bison steaks, sausages, burgers, etc., out of their store. And I've seen their burgers on the menu at the Funky Monkey coffee shop (I think that's what it's called) in Hereford, though I've never had one, and I'm sure other places serve them as well. 
 
As far as places that serve organic meat in Baltimore, True in the Admiral Fells Inn in Fells Point (www.truedining.com) might be what you're looking for. No bison on the menu, though.
