I always would buy their tzadaki at TJs in Balto. When I asked why it had been missing, they said something about some food import thing...I don't remember the details. I said I'd look elsewhere, and they said something to the effect that NO ONE SHOULD HAVE IT, at least legally. (I did buy some other type of tzadiki at Whole Foods, but it wasn't as good, btw.)

Sorry to be the bearer of bad news....

Rodman's Friendship Heights and Rockville stores have it--the 0%, 2% and sheep/goat milk, which is my favorite. I'm guessing that TJ's isn't carrying it because they can't get either the price or the quantity that they want-- the import problem that the company was having has obviously been solved.

I love Total Greek yogurt, too, but after I watch an episode of Alton Brown's Good Eats that shows how to make yogurt cheese, I never have to buy it again. It's pretty easy to make and doesn't take that much time to do :)

Sorry if this is a bit off-topic or you already know this ;) Just my 2 cents.

James, definitely! You can check out Roe's link for the howto.

What I do differently is that, instead of cheese cloth, I use paper coffee filter. A few of the filters on top of a strainer, then yogurt, and another few more filters before top it off with a plate and any kind of weight (jam jar, food can etc.) Usually, after 15 minutes, I'd take the whole setting out to drain the liquid off from the bowl underneath (I don't have deep-bottom container to use for this). After that, you can leave it in the fridge for as long as you like -- well, until you reach the desired consistency, that is. The longer you leave it, the thicker it becomes.

P.S. Go for whole milk yogurt only. I tried the low-fat/fat-free and find that the end result wasn't as good.

Hope this helps!

Not that anyone is still following this thread, but just in case, I have now made two batches of yogurt following this method. For the first batch I used 1 qt of Horizon organic milk, 1/2 cup of organic low fat plain yogurt (can't remember the name of the company, but Stone something), and 2 Tbs of a dark Russian honey. The end result was not too great, but passable.

For the second batch, I used the same milk, 1/2 cup of full-fat Total Greek yogurt, and 1 Tbs of a lighter honey. The result was fantastic, and once strained in my yogurt strainer the texture was virtually indistinguishable from Total's own stuff!

I now need to figure out a better way to keep the yogurt mix warm during the 3-12 hour period when it is supposed to remain at 115F. I have been putting it in a covered container wrapped in a heavy towel and placed in a turned-off warm oven.

I have no idea if it is readily available in DC, but here in Spain they make "greek" yogurt with sheep's milk and it is even richer and creamier than the bovine variety. It might be worth asking around at the Dupont farmer's market to see if you could get your hands on some to continue your experiments.
