Marinade for Delmarva BBQ chicken

A few weeks ago, somebody said they'd look into the marinade's recipe. I always love stopping by the Kiwanis stand on Rte 404 at Rte 16 on the way to Rehoboth. I let my nephew the chef - the one who used to work at the Adams-Morgan tapas restaurant (Azuna's?) before the boss ran off with the money (the place operates as a soup & salad place for now, run by the owners of the bar upstairs) - taste that lovely chicken and asked him to guess the main ingredients of the marinade. Within 10 seconds, he said...

apple cider vinegar.

Not white vinegar mind you - he said a.c. vinegar leaves a certain tingle on the tongue. He guessed other ingredients to be salt, pepper & some garlic.

Anybody else have any input?

  1. A few years back we asked about the marinade and were given a long strip of paper with the following recipe printed on it:

    Georgetown Kiwanis Club BBQ Sauce
    Cornell recipe

    For 100 half chickens:

    1 Gallon apple cider vinegar
    2 quarts vegetable oil
    2 cups salt
    5 tsp pepper
    1/2 cup poultry seasoning
    10 eggs

    For 5 half chickens:

    1 cup apple cider vinegar
    1/2 cup vegetable oil
    5 tsp salt
    1/2 tsp pepper
    1 1/2 tsp poultry seasoning
    1 egg

    Baste liberally at each turning of pieces.
