Fabulous & Easy Company Dish
Since time is always at a premium these days, I constantly seek to prepare the types of dishes that are fabulous in flavor and visually appealing yet quick and easy enough to serve on a weeknight. Here's one that went over exceedingly well last night:
Seared Halibut w/Snow Peas
1-2 lbs halibut fillet (I used about 1.75 lbs. for 4)
1 lb Snow Peas or sugar snaps, haricots verts or wax beans
lemon juice to taste
1/2 cup or so unsalted butter
1-2 tablespoons capers, drained & rinsed
sun gold or sweet 100 cherry tomatoes
Set a large pot of water to boil and blanch or steam veggies for 3-4 minutes. Set aside on large serving platter and cover to keep warm.
Season both sides of halibut w/ S & P. Set a skillet/saute pan with olive oil to hot over medium-high heat to brown one side of fish, about 3 minutes. Turn and finish other side to golden brown, about 4-5 minutes. Remove fish and place on platter with veggies, cover to keep warm.
Pour off excess oil and deglaze with lemon juice and wine, reduce sauce, about 2-3 minutes. Reduce heat, add butter a little at a time until blended into the sauce. Add shallots and sweat them for about 1 minute or so, then add capers and tomatoes. Stir to warm new ingredients, season w/ S & P and pour over the fish. Serve and enjoy. This tastes decadent and looks beautiful, especially with the contrast of colors, gold tomatoes and green veggies and contrast of flavors, the rich creamy taste of the sauce juxtaposed alongside the piquancy of the capers.
