where to find caul fat in DC area?
I'm making the pate recipe in the Julia Child / Jacques Pepin cookbook. Last time I made it (it was fantastic, by the way) was in Boston, and I knew where to find the optional caul fat the recipe calls for in Beantown. But I don't know of a source down here. Would prefer Montgomery County, but any suggestions would be appreciated.

I'm certain that Canales at Eastern Market has it or could get it--but I'd call ahead to be sure. Also Dean and Deluca or Wagshals--it might also be called crepine.
Actually any meat counter that does its own butchering should be able to get it with a little notice--especially asian or latino markets.›1 Reply
