As promised in an earlier thread (see Sietsema discussion below), I am providing my highly personalized review of Guajillo's after eating there with 7 other people this past Friday night.

First off, the margaritas . . . I was disappointed. I could be wrong, but I think the true margarita should NOT be made with sour mix. Such was not the case here. The first one, made with Herradura, was indeed strong but had that sour mix aftertaste that I can't stand. So, for the second round, we asked the bartender to "make one like he would make it at home" and to go easy on the sour mix. MUCH better. Maybe you just have to get the right bartender there, or give instructions. One person in our party ordered his with Patron and it was quite good but very strong as well.

The chips and salsa were very good - a little hot but not too, smoky and a nice contrast with the chips. We went through them pretty quickly.

Per recommendations from other posters, we ordered ceviche for the table, including the day's special, served in avocado halves. This was the best part of the meal - fresh, flavorful and with a slight kick that was not overpowering. We all loved it.

The entrees got a mixed response. I had the mole special (chicken) and was disappointed. I was expecting to be bowled over by the flavor but my reaction was the opposite - the sauce lacked oomph, for lack of a better word. Just not a lot there - no hint of chocolate, no smokiness, no earthiness. Other entrees were apparently better - the carne asada and the red snapper special were big hits. We all skipped dessert.

So, I would go back again, but I would just get ceviche and margaritas next time. I didn't think the entrees were as good as what I've had in other truly Mexican restaurants (Zarala's and Rosa Mexicano in NYC).
