      <content>I asked tonight and here is the answer: they use Uneo olive oil and the marinate their olives in it along with rosemary, chili flake, and garlic to get that flavor.

      <content>FYI - Unio olive oil will be doubling in price and my distributor will no longer be carrying it until the price comes down to normal. Bad weather in Spain created a shortage to the market. I doubt you will see it on the shelves of many stores after the current supply is gone. Maybe next year will be different.</content>

      <content>Sounds like Provvista has been working to secure good quality XVOO in bulk through a producer in Argentina. My rep said that the sample that they received, which will replace the 3 liter tins found in stores, tasted a little better to him than the Unio, but very similar in profile. The big 25 liter containers of Unio that I pull in, will also be switched to the Argentinian producer, until the Spanish olive oil supply and prices return to normal.
 
If you really love Unio, I would act quick as the supply at Provvista is about to go bye bye.
