Butchers/Meat & Gourmet Markets in Central MA

I just moved into the Worcester area and the two things I haven't found yet are a good butcher and a nice gourmet market.
As far as the butcher goes, I'm looking for someone that doesn't mind a custom cut or a special order. The gorcery stores don't cut it IMHO, especially when special requests are met with blank stares by the pimply 16 year olds behind the counter...
And for the market, I'm looking for someplace that is as likely to have a good Balsamic vinegar as it is artisan cheeses or maybe even pates.
The closest I've found is the Whole Foods Market stores in Framingham and Bellingham. Both are ok, but not places where I feel the clerk(s) will recognize a regular customer.
there is an italian market on shrewsbury st that has good meats and some italian specialties, don't know the name. ed hydersd market on highland? has good middle eastern foods and some oriental. there is also a vietnamese market on green st whose name i don't know.i'm not a local but venture there occassionally.
For a Butcher, I would highly recommend Tom at the Central St. Market in West Boylston. I don't know how convenient this would be for you, but Tom has owned the market for years and specializes in custom cut meats and special orders.
In addition, Darby's Bakery is located in the same plaza and they offer delicious fresh baked breads, pastries and specialty desserts.

The butcher on Shrewsbury Street is D'Errico's, and I like them quite a lot. Their Italian sausage is out of this world.
I second the vote for Ed Hyder's (I think on Pleasant) - really nice gourmet mediterranean selection.
