mysterious bun from japoneise bakery in brookline
tired of listening to me whine about pork buns, my dear sweet boyfriend stopped at the japoneise bakery on beacon street in brookline last night and picked up some buns. one of the larger ones had this savory, fiberous, roan colored stuff on top (some type of pork product??). the bun itself had the texture of a dense challah and there was an occasional scallion mixed in. There was also this sticky, not overly sweet glaze dripped on it.
can anyone make a guess as to what this was based on my feeble description? it was quite good.













I think the mysterious roan colored stuff is dried/fried shredded pork - sometimes called pork soong or pork floss. Its available in Asian supermarkets. I've seen it on buns at Chinese bakeries but I don't know the name for that particular bun, sorry. I do know my mom used to put it on top of rice porridge (jook) for us and when she wasn't looking I'd dip into the containter for a handful of tasty pork goodness. They also make a fish version that's crispier in texture and not stringy. I've had the fish version in a Japanese restaurant where it was on the menu as a BBQ Tuna handroll. Probably not authentic but it was very tasty and easy to make at home.
I tried to find pictures online to see if it matched what you had but the photo quality isn't that great. The first photo is just the meat (scroll down to longhai dried pork floss). The second link is a little bit better of a photo but doesn't look as stringy.
