chinese fried rice in Boston

I was born in Boston,and lived in chinese Rest. for Twenty years. Then moved to NY. I was in FOOD shock. The chinese food in NY was bad. The first time I orderd shrimp & lobster sauce I sent it back. Please can anyone tell me why your fried rice is so good? I need to know what is in your fried rice that makes it taste so good.What rice they use or what spices they use. I now live in NC and its no better here. Thak You. Loretta
