Sweet Basil in Holly Springs does a good job.

They are usually more than happy to adjust the spice.

I too like the "stew" especially when served with the French bread. They also make good hoagies.

Dalat in Mission Valley between the NCSU campuses is my favorite. They make a house roll with vermicelli that's worth the trip. Have you tried the Vietnamese place in Wilson next to Griff's yet?

There's a great place in Durham, run by a Vietnamese woman and her American, soldier during the war, husband. It's on Guess Road just south of I-85. I'm not sure of the name but it's about 1/4 mile down on the right and it's got a red sign. It's looks a little divey but the food's awesome...

The Guthries (couple mentioned above) have sold the restaurant. Fortunately, Han sold all her recipes along with the restaurant, and the food is just as good. I ate there over the holidays after a several year abscence from the triangle, still excellent.

Lime and Basil in Chapel Hill is pretty good, although I humbly admit to being a neophyte as regards Vietnamese food. I'm not a fan of Pho, but my wife loves it.

Try Pho Far East - Also, on Capital Blvd. MUCH better than Pho Cali & better atmosphere too!

I like Pho Cali but the drive to Capital is a bit far for me. My "go to" place is 9N9 on Miami & T.W. Alexander - technically not Raleigh, but pretty close!
