      <content>...I'd have had to try all the ice cream in seattle, and I have not.  For historic ice cream at a long-established ice cream shop (do they still make their own?) try Husky, in West Seattle. 
 
For a university-crowd-pleasing cultural event try Cold Stone Creamery, on the Ave. You order up a base flavor (vanilla, sweet-cream??, chocolate???) and then some "mix-ins" (oreos, m&amp;ms, various nuts, fruits, syrups, etc) and the staff will mix them all together on a chilled marble slab, right before your greedy little eyes. Very fun. Maybe more theater than cuisine, but quite good and very long on the memorable...

      <content>The best ice cream I've had in Seattle is the house-made vanilla ice cream I had at Mistral--unfortunately this is not practical when one has an ice cream craving and doesn't want the tasting menu.  
 
Re:  Husky Deli.  I went to Mashiko for dinner Thursday, and had ginger caramel ice cream for dessert.  The ginger caramel ice cream was made by Husky specially for Mashiko, so I assume that means that they still make their own ice cream for the store, too.  I prefer their premium flavors, which taste richer than their nonpremium. 
 
I think Dahlia Bakery has good ice cream (maybe a little too much fat for a less than totally smooth mouthfeel).  If gelato counts, I like Gelatiamo and the Bottega Italiana in Pike Market.
 
If the original poster is willing to venture over to the Eastside, there are more options.  For the mix-in type of ice cream experience, I much prefer Marble Slab (in Redmond) to Cold Stone.   Cold Stone's ice cream tastes rancid to me, and I get the feeling that the mix-ins are necessary to cover up how nasty the ice cream tastes.  Marble Slab's ice cream actually tastes good, with or without the mix-ins.  
 
Also, for a more old-fashioned ice cream kind of place, there's Theno's Dairy in Redmond.  </content>
