This from the N&O

"We call it a fried banana pudding wrap," says its creator, Vincent Thomas, owner of Creative Catering in Raleigh and Thee Chili Express fairgrounds booth, near the waterfall and grandstand.

To make the dish, Thomas puts a peeled banana on a stick, dips it in batter and deep-fries it, sprinkles it with cinnamon sugar then serves it up with a cup of pudding for dipping.

"God gave me this vision," Thomas says of his inspiration. "It tastes just like grandma's banana pudding fresh out of the oven."

He also serves another version, with the banana cut into bite-size chunks before being battered and fried.

Okay, we went to the fair today and had to try these. It was a bit disappointing. Basically mushy hot bananas dipped in thin pudding. Maybe with better indgredients? What I really like about banana pudding is the savary sweet, but also the contrast in textures between the cookie, bananas, pudding and meringue, which you, obviously, miss in this dish.
