As you head over Hwy 20 toward Winthrop/Twisp, stop at the Cascadian Farm stand a few miles east of Rockport. They make homemade ice cream from their own organic berries. Their espresso shakes are also outstanding. Avoid the shortcake, though. You can buy their produce, pickles, etc as well as a small selection of noodle salads, sandwiches, etc.
I'm pretty sure there are threads on Winthrop/Twisp/the Methow Valley/Lake Chelan if you search from the Chowhound home page.

That is the first instance of "small selection of noodle salads" I've ever encountered. The closest my head can get to "noodle salads" is the wonderful Thai salads with noodles and fish-sauce and a little meat. Are these those? or am I missing something obvious here?

Maybe I should have said pasta salads. They do have an "asian noodle salad" (as well as other pasta salads and I think a seaweed salad) but I doubt it is as wonderful/authentic as you are describing. I just wanted to point out that they have more than sweets.
