        <content>Had a liesurely run down  HWY 308 (past the world's Largest C-Mint Yard Art Company) and through Thibodeaux. Had enough time to make the stop at Bourgeois Meat on West Main and grab some goodies. The requisite jerky, of course, and andouille &amp;c.  ANother fellow was ordering headcheese and when I saw the block of it I realized that this was the Real Deal so I bought some. First class stuff. Best I've had since Dupre closed his shop in Ville Platte.
 
Bourgeois has supplied other stuff for years but for some reason I'd never had the headcheese. (Neither the headchese or the beef jerky survived the night)</content>

      <content>Hazel, you hit the jackpot.  Bourgeois' is the best of bayou Lafourche, certainly (but I believe its address is technically Canal blvd).  I like their fresh sausages best of all...their smoked products tend to be overly smoky for my tastes.  Another good bayou Lafourche head cheese is from "D"'s Cajun Butcher on 308 in Larose, about 45 miles S of your last roadtrip.(Incidentally, I have a birdbath in my backyard from the aforementioned casting yard.  No "blue mary", tho.)</content>
