One of my new addictions are the roasted Oysters at Drago's in Metarie. They start them over a heavy open flame grill till they start to simmer and open.
Then they take the top shell off and sprinkle some amazing seasoning on them and finish them off in the Salamander (broiler) If you try them as an appetizer, you will surely order another 'batch' as your entree. Try 'em - if you like oysters in any way shape or form - you'll go crazy for these.

I lived right near Drago's and had the oysters many times. I make them at home quite A bit (they are very popular at my cookouts). The Two thing I do different are: I use fresh herbs on them, they do not get the "burnt" flavor they can have at Drago's and I do not put under the Salamander, I use the lid down on my Webber (you must make them on A real grill!) to finish raosting them and melting the cheese. If you are going to make them at home be shure to buy big to huge oysters because of the shrinkage when you cook them.
