Robert, did you MEAN to say that the servers are dark skinned?? Because I can't figure out how "swarthy" might modify the word/concept "service."
 
swarthy = dark complexion
 
I'm not trying to be a smart ass or vocabulary queen here...I'm just trying to understand and give you the benefit of the doubt here - and the chance to clarify.
