Looking for the recipe for this version of green goddess dressing served at this cafe (we can't remember the name!!) in Kirksville, MO. My friend has tried to make it on several occasion, just trying to guess at what the ingredients might be, but has failed to hit the nail on the head.

I know this is vague, but if anyone has any clue at all....?

Thanks!

Might that be Felicity's...a new cafe on the square specializing in coffees, cold sandwiches and salads? I tried to do some digging and that would be my guess for the name...

I looked through my older cook books, and found seven recipes for Green Goddess Dressing, all pretty much the same. The original is from the Palace Hotel in San Francisco. The William Archer play the Green Goddess had a run in SF in the 1920's, and the star of the play, George Arliss was staying at the Palace, and was served a specially created salad with this green-hued dressing. In those days, (pre blender and food processor) it was very dificult to make, in that the juice of the parsley and chives had to be squeezed out to color the dressing. Today it is easy.

1 cup mayo
3 T sour cream
3 anchovy fillets
1 scallion
2 T chopped parsley
2 T chopped chives
1 T tarragon vinegar
1 t chopped fresh tarragon
Salt & pepper
Place everythiing in a food processor, and run until smooth.

Other versions include a garlic clove, and/or 1 T fresh lemon juice.

When I worked at a fancy steakhouse in the early 60's, this dressing was very popular.
