Bar-b-que at U of I/Champaign

Thanks Cathy2 and jbburn. I found Po Boys. We used to go for pulled pork sandwiches and ribs in 1977-78. All food was served on paper plates with Wonderbread. It was a tiny place, mostly carry-out, with a few tables and counter service. Back then is was cash only. We haven't been there for a long time. Due to soccer and tennis stuff with the short people, we will be in Champaign this spring/summer and will check it out again.

      Does anyone have any idea how to make the Po Boy Sauce used on the sausages. I know there is a bunch of cayenne and I think apple cider, but this is a BBQ sauce like no other...and I miss it dearly.

        Champaign-Urbana is a surprisingly good place for BBQ. Hickory River on Cunningham in Urbana is clean, cafeteria style, and consistently good. Some of the best I have ever had is at a new place called Black Dog in downtown Urbana, on Broadway. Wonderful hickory/apple smoker, great sandwiches and ribs. Not to be missed. Li'l Porgy's (Champaign and Urbana) is also good.

          Being that I love in NY I also search for ideas as to this sauce. Yes, cayenne, aple cider maybe of the vinegar variety, water, and then what.
          My father used to bring back quarts of the stuff from his pilgramages back to his old Uof I, and it always seperated into distinct layers. My father new Arnie well, and aside from the ingredients listed above, could only offer this bit of advice. 'Knowing Arnie, there is nothing fancy in there.' Where to go from there...I don't know.
