The local sandwich of Springfield, is the horseshoe. It's been discussed in other posts at length. The attached link provides some background and data from the Springfield paper.

from the article, "The classic horseshoe starts with two slices of toast side by side on a plate, usually topped with two beef patties. A sea of cheese sauce is poured over that, and the open-faced concoction is sprinkled - like jimmies on a tub of ice cream -
with french fries."

Is the "sea of cheese sauce" that crappy squirty stuff served w/nachos or a real cheese sauce?

a true horseshoe cheese sauce bears no resemblance to "squirty nacho cheese" sauce. It's the beer, aged cheddar, etc., that moves it past ordinary. My personal favorite is the Red Coach Inn's version, alleged based on the original Leland Hotel recipe. My family makes it a necessary stop every time I visit home. For the "dieters" in the group, they make the most amazing chef salad...layers and layers, topped w/ blue cheese, they only thing they go light with is the lettuce!

Thanks for the reply "a true horseshoe cheese sauce bears no resemblance to "squirty nacho cheese" sauce"
Mick!!

The Horseshoe sandwich now remains on my list of Chow-do's!

I had concerns as one of my favorite cheddar fries place went to a squirty sauce instead of the Merk's cheddar spread.

I must concur w/ Mick that the "Coach" has marvelous "shoes." My favorite is the pork tenderloin and even though I am large of girth, I can barely finish that baby. There is another spot that my fellow lawmen in Springfield introduced me to for shoes that was pretty good too, but I can't recall the name. Something like Kitten's or so...it was a diner that was on an East-West St., somewhere east of the Public Works Dept.?!?

Big D, would that be a grilled or fried Tenderloin?

I'm a fan of both, just curious

I am a huge fan of the cheese on the horseshoes at Chatham's Fat Willy's. Chathams Ice House which is now gone had the best horseshoe cheese I've ever had. Chatham obviously knows horseshoes.
