I know Fox &amp; Obel has both the dry air-cured style and the salami-textured slightly softer style.  I wouldn't be surprised if most of the local Whole Foods and Treasure Islands have some of it, too- Look in the deli sections instead of over by the bacon/hotdogs (where I find most of my Mexican Chorizo).</content>
