<content>For all those Trio fans out there here is my personal statement about my closing.

ANNOUNCEMENT FROM OWNER HENRY ADANIYA:
January 9, 2006

Since opening in 1993 I have devoted myself to introducing innovative culinary vision to Chicago. Through all of its incarnations Trio has surpassed all my expectations; we achieved things I never thought possible. It is now time for me to move on and I have decided to close Trio at the end of this February.

I have always been willing to forge new territory and through this believe Trio has influenced dining in America. For me, the sheer essence of my vision is best expressed in its present form as an Atelier: playful creativity, dedication to art, a love of food and people. That principal foundation has remained constant throughout the years.

I have been very proud to own Trio and closing it is not without sadness. Still, other aspirations beckon me and I move forward to the challenge of new ventures. I have already started a consulting business and have always dreamed of opening a hot dog stand on the beach in Hawaii. Aloha!

Chefs Dale and Mary&#8217;s current recognition has proven them to be extraordinary culinary talents. As with those chefs before them, I look forward to seeing them going out on their own to showcase their creativity. Dale is looking at several business opportunities and Mary has her sights set on opening a Patisserie. We will also secure our entire talented staff in houses of excellence.

We have appreciated your patronage over the years and hope you take the opportunity in the coming few weeks to join us in celebrating our legacy. The last day is tentatively set for Saturday, February 25, and we&#8217;re also planning a closing event to honor our twelve-year legacy (stay tuned to our website www.trio-restaurant.com).

Thank you all,

Henry Adaniya
