I'm co-hosting a party where we will be serving tapas and I'm having a hard time finding Spanish chorizo for a couple of dishes I'd like to make. The stuff you get in the Mexican markets isn't right.

I know there are several kinds, each suitable for different purposes. I need one that is appropriate for sausage with figs. It can be domestic - I'm not that picky.

It seems to me this was covered somewhere here a while ago but in searching down the posts I wasn't able to find it. I found a place I can order it from online if need be, but if I can swing by somewhere and pick it up I'd prefer that.

Thanks...

I'll provide the info rather than a link, as it's simpler: Palacios brand, imported from Spain and given the stamp of approval by the NYTimes is sold at La Unica on Devon east of Clark and at El Mercato on Southport at Grace.

Not sure whether this was your online source, but I can tell you that everything I have ordered from tienda.com (see URL below) has always been top quality. For someone who lived in Spain for a long time and fell in love with Spanish food, this is a gold mine for "comfort food."

Read your post again more carefully. For sausage with figes you probably want a softer chorizo of the sausage rather than salami type. The only place I've seen them has been mail order or at Deliberico.

Hope your party goes well. Deliberico is also a great source of some spanish ingredients, like piquillo peppers, that are ridiculously expensive for small quantities at gourmet type stores, but available at a reasonable price there. I no longer carry back a year's worth of one pound tins of piquillos since I've discovered them.

Also the pickled garlic, it's the bomb. Everyone I've every served it to has raved, even non garlicaholics. That an zinc will often kill a cold. Sarica is the house brand of the owner/chef of Iberico. Their olive oil is pretty good and cheap too.

I find I go to Iberico to shop more than for tapas now.

I've only been to Iberico once - it was jam packed so I don't think I've ever been aware that they had a deli counter. I'll have to check that out!

Is the Sarica pickled garlic there the same stuff that you can get in jars at Lincolnwood Produce?

Thanks!

Don't know about Lincolnwood Produce. The Sarica picled garlic comes as slices and as whole cloves. Whole cloves are defintely the way to go.

Thanks.
