Signature Drinks

I'm curious about signature drinks... Every city seems to claim a legendary drink or two, except for Chicago. I know that the Pump Room serves something called a Bull Shot with beef boullion in it, but are there any other classic bars or restaurants with mythical inventions?

    i could be wrong, but isn't a gibson named after the steak restaurant gibson's? that would be (i think) a martini with a pearl onion instead of an olive as garnish??

      a gibson is similar to a martini, but it is generally served on the rocks, and, yes, it does have a cocktail onion instead of an olive. However, the drink preceded the restaurant by, oh, a hundred years or so. I don't know if the restaurant was actually named after the drink or if it just sounded clubby or steak-like. Gibsons may have invented a way of minting money, but definitely not a signature drink.
