        <content>does anyone know where to buy fresh semi-cured manchego cheese (from spain--"manchego semicurado") i have purchased from sunset foods in northbrook and also whole foods on ashland and both times they have been dry (indicating it's been sitting since they cut it) and not very flavorful. i have also purchased poor quality manchego at cafe iberico's deli, a place where i figured i'd get a pretty decent cheese. 
 
anyone been to the market in sam's wine? usually in their ads they list a few cheeses. are they fresh??

      <content>I can't say Sam's has Manchego, but I got some Cabrales there, last week, that absolutely kicked my patootie. I've been a regular at Sam's counter for over a year now. Very well maintained cheeses... very good selection (Neal's Yard, etc)... very knowledgeable staff. Give 'em a call. If they don't have it, try calling Fromage&amp;Company, in Glen Ellyn. 630.469.7100.</content>

      <content>thanks for the info! if they have cabrales, they probably have manchego. i'll have to stop there for sure. have you ever had the cabrales mashed potatoes at mas? (i'm sure you could duplicate it in your own kitchen quite easily....yum yum!)</content>

      <content>This is embarrassing! I eat at Mas on an almost weekly basis. [Its one of my girlfriend's favourites.] Of course I've had the potatoes.

      <content>The cheese selection at the Binny's Liquors (nee Chalet) in Skokie is excellent.  They have 2 Manchegos to choose from, fresh and aged one year.  They also have Cabrales.</content>
