Prince Edward County, Ontario - Fine Dining

My husband and I are spending a weekend in Wellington at the end of June. We are looking for recommendations for fine dining restaurants that use local produce and meats to the extent possible and also have a great wine list. To give you a sense of what we're looking for, in Toronto we like Opus, George, Jamie Kennedy, Mistura, Splendido. Also enjoy Beckta in Ottawa. Any help would be greatly appreciated.
If you are willing to drive over to Picton, try the newly opened Harvest Restaurant. It's run by the couple who owned the Milford Bistro. I am assuming they moved for the larger space and more central location. As the Milford they fit your criteria--excellent locally sourced menu and wine list.

Willie does a magnificent job with local products. One of the better cellars in the "county"
Harvest should be good but haven't tried as yet in new location.
Some of the new wineries are good for lunch but I doubt they would do dinner that would be up to standard of previous two mentioned.
Everything in the county is mediocare. Try some of the wineries for tastings. all good except for Black Prince in Picton.
The Waring House is quite nice as well, a little on the pricey side, but the Barley Room pub next door is more reasonable (and its the same kitchen)
