I recently returned from a few days in Banff.
Thanks to a recommendation on this board, we had a lovely dinner at Fuze, which still seems to be a relatively unknown spot in Banff. The space is lovely, very slick and modern, quite different from most places in the town. I would say the food was very good, made even better by the friendly service and the extensive wine collection. Definitely recommended.
The other top dinner was at Saltlik (upstairs). I had the blue cheese steak (AAA Alberta beef) and everyone at the table shared a bunch of sides (grilled asparagus, yummy scalloped potatoes, mushrooms).
We had a so-so dinner at Buffalo Mountain Lodge - the timber lodge atmosphere is cozy and beautiful but the food and service were very average. Maybe it was an off-night. We also had some very fresh and reasonably priced sushi with a gorgeous mountain view at Sushi Miki.
We weren't up for a multi-course, $100 a person dinner at Eden but we did go to the other restaurant at the Rimrock (Mariposa maybe?) for breakfast. S-P-E-C-T-A-C-U-L-A-R views, very friendly service and the food was delicious. Similarly, we drove to Lake Louise one morning and had breakfast at the Post Hotel - beautiful room, great food (you'll need a good hike to work off the rosti with eggs and gruyere but it's worth it), mountain views. For those looking to enjoy some top-end spots on a budget, I highly recommend "splurging" for breakfast.
Finally, we stopped in Canmore and Calgary on our way home. Unfortunately we hit Canmore mid-afternoon so Crazy Weed wasn't open. We stopped in for a grilled panini and cappuccino at an Italian cafe/grocery store (forget the name) - great spot. I loved the vibe in Canmore - the mountains are right on top of you and there are loads of cute spots to eat. In Calgary, we were seduced by the outdoor fireplaces on the patio at The Living Room on 17th Avenue. The appetizers, including the simple organic greens, were outstanding. My chicken with green curry was pretty good - a bit bland/saucy. My husband's pasta was really bad - somewhere between bland and inedible - to their credit, they whisked it back to the kitchen and took it off the bill. With all of that said, we really liked the atmosphere and would go back again to try a couple of other dishes.
