        <content>I'm trying to crack a recipe from Bodega because I foolishly promised a dinner guest I could. I've cross posted to the home cooking thread but thought I'd post it here because time's of the essence (dinner's tomorrow)and perhaps some of you are familiar with the dish. The menu item reads thus:
 
Escargot with green peppercorns, brandy, Stilton cheese on Brioche.
 
It's actually a cream sauce so.....
 
For the sauce, this is what I'm thinking: reduce white wine and green peppercorns to a glaze, add a tbsp of brandy and flame, add cream and thicken, reduce heat and beat in crumbled stilton.
 
Do you think this will work or does anyone have a decent recipe?

We keep the boards focused on their separate subject areas - recipes on home cooking, local recommendations on the local boards - but we do allow 'heads up' posts on the local boards. 
 
In situations like this, your best course of action is to post the thread on Home Cooking, then come over to Toronto, and post a thread here with some of the information from your Home Cooking post, a link to it, and a request for Torontonians to please reply over there, somewhat like what we've done here.
 
So Toronto hounds, if you can help Mike out with his sauce question, please head on over to Home Cooking, and post your reply there.
