pusateri's doesn't always have it. also, any of the kobe beef in toronto isn't actually kobe. it's canadian (or u.s.)-produced wagyu. same breed as kobe. fyi, to be called kobe beef, it has to be raised in kobe, japan. many japanese producers get around this inconvenience by taking advantage of a loophole which allows them to call it kobe as long as the cow spends the last month or two of its life getting fed in japan. so, the stuff called kobe here is not kobe in name, but it may as well be. it's kinda like calling a good california sparkling wine champagne.
