      <title>Need Houston dining recommendations</title>

      <description>La Guadalupana is the sort of small ethnic restaurant which Houston does well and is excellent but it is Mexican, not Tex-Mex.  Made from scratch Mole Poblano is not a Tex-Mex dish, it is Oaxacan.  Probably many of Houston's hundreds of Tex-Mex places are better than anything you can find in DC but El Tiempo is the best.

Pappas BBQ is a chain with locations in other cities and is very mediocre, anyway.  If you're going to consider Pappas for BBQ might as well consider Pappasito's for Tex-Mex.

Pierson's for BBQ is best; if you're going to try Luling City Mkt follow the advice to go early for lunch.  Might also consider Thelma's, very close to Reliant Stadium.  Enough has been said about Goode Co.</description>

      <description>In complete candor, I think Hong Kong Royal is wonderful.  They have dim sum round the clock and wonderful white board special written in Chinese.  They speak wonderful English and are extremely helpful.

They also sell whole or partial crispy duck and red bbq pork to go and they hang in a case near the front by their lovely necks.</description>

      <description>oh man,, casa juardo in el paso.  when i lived in sa i used to get out to elpaso every 6 wks or so and casa juardo was a regular stop.  i used to bring back chips, their salsa,, anything that i could carry..  the chicken mole was/is the standard for all others (tho Hugo's in Houston is right there).   and wow,, the crystal pistol in sa,, now that brings back memories... I lived in a small apt near sac and the crystal pistol was a saloon i frequented often.

The Crispy taco, is slightly different from the Puffy taco.
The crispy taco is made by frying a commercial made or molino made corn tortilla.
the corn tortilla is fried in oil / lard till crispy, then filled with spicy ground beef, lettuce, diced tomato, onion, and topped with shreaded cheadar cheese.

Puffy  taco shells are made by frying raw tortilla dough in hot oil. Tortilla dough(masa) is pressed into a round-slighty smaller than the 7" tortilla- the first side(which will become the inside of the shell) is cooked for about 20-30 seconds in the hot oil, then flipped and folded. as the outside of the shell cooks, the tortilla seperates and puffs. the outside of the shell is cooked untill crisp. then the puffy taco is filled with the traditional taco fillings.

Crispy Tacos are offered at almost all mexican restaurants...20 % offer puffys.

Some restaurants dont fry the shell to total crispy, so it dosn't break-apart to pieces.
I dont mind a crunchy shell, thats what the rice and beans are for.</description>

For example, I just read an old article in the Austin Chronicle about Southside Market, Elgin. In it, they write about Southside's "Elgin Hot Sausage": 'The recipe has changed over the years, and now the sausage is not very hot, but they kept the trademarked name due to the great popularity of the product. "We use less pepper in the recipe so everyone can enjoy the product, even the children," says Brian Bracewell, grandson of Ernest and the third generation in the family business.' As we all know, anything can be justified if it's "for the children". They could easily have developed a second, mild sausage for those who prefer it, but instead they sell a cheapened (in my opinion) mass-market product in place of the sausage that put them on the map.</description>

      <description>William...I won't 100% concur with picky's summary of the meal, but I will say that my wife and i have been huge fans of Gloria's since we moved to Dallas 4 years ago.  The last time we went (September?) there was just something sort of off about the whole night.  It was like they had changed the recipes for everything.  Now maybe this was just a bad night, but it sure seemed like something more than that (as our previous couple of trips had been kind of suspect too).  

We tried Mario Sabino's this weekend and i have to say it reminded me of the Glroia's we fell in love with 4 years ago.

      <description>I've got a lot of recipes/methods for 'brisket.'  But when I get that hankerin' for Central Texas-style smoked brisket, I don't do that myself.  I do realize it can be done.  I'm a certified KCBS judge, and have gone to quite a few of the barbecue cookoffs and tasted some pretty fine brisket, but it's a lot of work.  It's not easy.  You have to smoke it for a long time and keep a very good eye on the temperature, often staying up all night checking it.  I know many, many folks that try it - folks considerably better than I at smoking meat, and with much more expensive equipment - and theirs is generally just okay.  My son worked his way through college at a small barbecue joint in Austin and he's got a pretty good rig and does a lot of backyard barbecuing, and even he usually buys his brisket from the pros.

I know that there are a great many good rubs and marinades, but my very favorite is just the simply-prepped, perfectly-smoked brisket from the legendary old German meat markets of Central Texas.

For my money, anyway, you can't beat it.

Back in the day it was the Dino's location near Six Flags Mall which is now long gone :(  I still make a point of going to Dino's whenever I'm anywhere near the Collins/Arkansas area in Arlington.  Much to the chagrin of my husband, the baguette enthusiast, I don't like super-crusty bread because it tears up the inside of my mouth.  I personally love the tasty bread at Dino's.  And their cheese and cold cuts are top quality and sliced to order.  Yum, makes my mouth water just thinking about it!</description>

      <description>I live in Houston so I'm just filing this away for future reference.  I have family scattered about town so just about anywhere would be good.  I typically find myself out on the West side of town, Rice Village area, 59 North and the Museum district.

I'm open to most types of food except for exclusively vegetarian!  I have a preference for international cuisines - Chinese, Thai, Vietnamese, Greek, Mexican are the first that come to mind.

      <description>I think we all pretty much agree that although we can find decent mex and texmex in Dallas, the better offerings are all south of Maple.  And the further south you go, as it stands to reason, the better it gets.  It is rathger cumbersome at times getting to Cliff, but props where its due.  And amen and glory hallelujah to La Calle Doce.  The brunch is off the chart greatness, but wonderful any time day or night.</description>

      <description>Hopefully you will have a car because there is not a lot on that side of town. 

Steak - I would consider Chama Gaucho brazillian steakhouse.  Its $33.50 per person (ALL THE MEAT YOU CAN STAND + big salad bar).  I was leary of it being kid friendly, but we were there on a Sat afternoon and our two kids were fine.  ( I think it is a few dollars cheaper if you catch lunch there. Maybe $29.99?). No doubt that your son would enjoy the spectacle of all that meat. 

BBQ - The one place I know featured on Food Network was Texas Pride.  I have been out there a couple of times and they have pretty decent food.  It is certainly original.  Gotta say the Pecan Pie Cobbler was a very nice touch for dessert.  Somtimes they have live music. </description>

      <description>Um... you do get, do you not, that, as I said several times (ie: "Those boxes of Manteca [capital M]..."), I was indeed specifically referring to that one product, those boxes labled "Manteca" that sit, unrefrigerated, on store shelves for months?

And not just 'manteca/lard' in general?


Oh, and PS - I think I did know that "Mexicans also bake apple pies..." as I recently spent some time visiting a delightful hacienda in Guerrero, Chihuahua, in the heart of one of Mexico's most important apple-producing regions.

A great many wonderful meals.  Including apple soup.

And biscuits.

And even pie.
