Been there many times and will never go back. The quality of the food has gone down hill as well as the service. Ive also heard rumors regarding one of the "owners" had been caught with another employee and his wife was not happy. Its amazing what you hear in the small town of the Kiln.

The Old Country Store in Jackson, TN sounds like just what you're looking for. It's just of I-40 on the west side of Jackson. It is a buffet, but they make everything from scratch fresh everyday. They even buy from local farmers whenever they can, so they always have the good stuff. Their crackling cornbread was one of Garden & Gun's 100 things to eat before you die. They do them as hoecakes, and they normally have collards, turnip greens, and mustard greens on the buffet, so you can pick your poison.

But there are some decent Asian markets here, such as Hyundai Oriental on Decker Blvd., or 88 Oriental Market on St. Andrews Rd.

Made my first trip out to Bessemer to try Bob Sykes. It was really quite good. I had spareribs which were very smokey and hit just the right spot between too loose off the bone and too chewy (I usually find Dreamland ribs to be too far on the chewy side). We also tried the chopped pork, which was also moist, smokey and delicious. We got WAY too much food. I had plenty to reheat for a big lunch the next day. I need to return to try some other things at Sykes, and I certainly will. The place was busy, doing a brisk business. Nice to see that. My last trip to Saw's was a bit of a disappointment. The serving size of pulled pork was far less than they served in the past. The chicken that my wife ordered did not taste particularly smoked....I trust this was a onetime glitch, as this place has been great in the past. Finally, we went to Archibald's in Tuscaloosa, but the waitress we got completely forgot about us and we finally left without ordering. Really a shame, since there was another waitress waiting on adjacent tables who seemed to be doing a great job. I just don't believe in sticking around and giving my hard earned dollars to places that pay that little attention to service.

Yes, I've been three times for dinner and have not been impressed. Now, mind you, I'm a big fan of Ilios Noche (their other restaurant). This is a completely different concept from IN & NK and I suppose they have an average joe suburbia public they are trying to appeal to. For me,the food was bland and uninspired... and lack seasoning. I've not had the breakfast or lunch yet.

Went the first week they opened, and there were some usual problems: lackluster service, things already taken off the menu, bad timing, etc. Went back today for lunch, and it was great. Affordable. Gargantuan portions. One thing I really appreciate is the burger is local free-range, grass-fed beef from a farm I've bought from before (Boutwell Farms). Great stuff. I'm not sure if the ground beef in the cabbage rolls were the same, but I hope so. They were delicious! I'll have a hard time not ordering them every time.

The Liberty-Charlotte NC

I went to The Liberty for dinner earlier this week and it is fair to say that they are still working out the kinks on the service front.

We had the potato chips drizzled with bleu cheese (crisp and savory) and the stuffed dates (great balance of flavors) for the apps and the meatloaf (good, but a little dry) and the bacon-wrapped scallops (huge and moist).

Though it wasn't crowded, it took 10 minutes for the server to arrive and another 10 minutes to get our drink order filled. From there on out, the service was fine but it is clear that more beer training is necessary for a beer-centric restaurant. The servers need to be educated about food/beer pairings, how to properly pour beer (mine was poured carefully, like wine so as not to raise a head) and the proper temperature for beer styles. Though the drafts were at proper temperature, I had a bottle of Founders Porter that was served ice cold, though fortunately not in a chilled pint glass.

Didn't really eat anywhere that stood out, tried several that *didn't* stand out, but the highlights of the trip were Bloody Marys at the Corner Bar- made with a commercial mix, but they spice them up really well, and *anything* from the bar at the Grand Hotel. Yeah, I know- that isn't really the kind of place that you go to Natchez for (the Eola is much better for ambiance), but I can guarantee that if Kathy is working, it will be worth a visit- she's as sweet as sugar and funny too!

Charleston, SC, burger assessments

I posted this in the other thread, after writing the above:

IMO, the perfect burger has to have a good beef-to-bun ratio, with the beef accompanied by, but certainly not dwarfed by, the bread. Meat should be at least 1/2 pound, IMO, more wide than high. Less bread is more, since bread has a heavy texture compared to the relative lightness of the beef. The bread should be somewhat flat so as not to make the burger too high so you can still bite into it, and there should be a slight chew to the bread, and maybe even a small crust, but still soft and pliable so you can tear it with your teeth. Paramount is the pronounced freshness of the beef that should sing on its own, and clearly. It should have a very minor crust and char flavor, be juicy and naturally flavorful, but not so juicy to ruin the bread, and with a cohesive, smooth consistency that is neither dense nor crumbly, slightly pink in the middle, and with toppings that are very fresh and flavorful and a distinct complement, not lost in it, including small but present amounts of thin leaf lettuce, thinly sliced, wide, tomato, onion (prefer yellow, but red is OK in extremely small bit) and avocado, occasionally just a slice or two of crisp bacon (since it is strong-tasting.) I don't think caramelized onions are necessary as they are too mild and sweet and rather stringy. Cheese should be properly proportioned as well, and on the *slightly* gooey end, not lost in the sandwich. I am partial to Cheddar, as I think a slightly sharp or mildly creamy cheese is necessary to make itself stand out. American doesn't seem to really cut it unless there is a hell of a lot of it. Seasoning (salt *and* pepper) should be present but not overwhelming (more pepper than salt) and I am quite open to a little herbage and perhaps a hint of garlic. I am also open to alternative toppings so long as they are complements and not dwarfed by the beef and/or bread, but with good beef, I think less is probably more when it comes to accompaniments. I can probably do without condiments if the beef is good, but poor beef usually can use a slight kick of ketchup and/or mayo (not really a fan of mustard on burger).

I've been twice and really enjoyed the Thai food: Tom Yom, Basil Chicken, and a glass noodle dish that I can't seem to remember the name of right now.

Maduros are not a dessert, they are a side dish. However, I've never thought they traveled all that well. They're much tastier when fresh. Rice pudding, on the other hand, doesn't need to be hot and it's texture won't deteriorate in 1 1/2 hours. Of the two, I believe it will be a more successful choice.

Chameleon Soul Food (Asheville)

I feel bad b/c I am the one who recommended this place to begin with. I will chime in with agreement with the latter posts...it has not lived up to what we experienced in the first few weeks of opening (I swear it was good then!). Have had no desire to go back after two visits offering skimpy portions, high prices, and so-so food. The fried chicken is the only thing that is still stellar. The mac-and-cheese has been downright awful the past 2 times...no creamy coating, just buttered noodles with some congealed cheese on top. That is NOT soul food! Staff and owners are still super sweet but I won't be back.

Barbecue Road Trip

there was a destination spot -- local landmark around Spartanburg SC where they even held church services on Sunday. Gi-hugic place. Probably still there. Google it. Certainly worth the 'experience.' FYI -- IMO we're losing our culture of southern food to factory made and chain restaurants.... I've had very little really good barbeque in a year in the Carolinas. Most places don't smoke it, and even the caterers run to IGA for the 'igabbq 89cents' on special. I've only had really good 'pig' as they call it here on a game preserve... BTW, the former food critic for Esquire compiled essays into a book, 'Fork It Over.' One was just such a BBQ road trip. A good read....

Plantains can also be sweet depending on the time of the year. Sweetness is not what determines a plantain or a banana..it is the flavor and coloring. I've also had plantains in Puerto Rico...they are also sweet and very good. The more dense the plantain the less ripe the plaintain or may just be that particular type of plantain common to the area of South America you were in.
